Aruss “Jai” Lerlerstkull is a chef who cooks with both precision and feeling. Trained under the legendary David Thompson at Nahm, Jai brings deep technical knowledge to his food—but what drives him most is a personal connection to Thai flavours, especially the kind he grew up eating in a Southern Thai household.
Known for his obsessive attention to detail, Jai takes traditional dishes seriously—but never too seriously. He respects the past while trusting his instincts to reinterpret it. Whether it’s choosing the right coconut cream for a curry or developing a reimagined kanom krok with chicken liver pâté, Jai’s approach is grounded, thoughtful, and always evolving.
