About Chef Paolo Vitaletti

Chef Paolo Vitaletti was born and raised in Rome, where he learned to cook from his mother and developed a deep appreciation for quality ingredients through his family’s butcher shop. After working in kitchens around the world—from London to Jordan to China—he settled in Bangkok and opened Appia in 2013. He’s also behind Peppina and Giglio, two restaurants that showcase regional Italian cuisine. Through his work, Paolo has helped shape Bangkok’s Italian dining scene with a focus on tradition, simplicity, and honest flavors.
