Born and raised in Guadalajara, Chef Paco is regarded as one of the most important figures of Mexico’s vibrant culinary scene. Having trained under a slew of culinary heavyweights at various notable restaurants around the world, Chef Paco returned to Mexico to open Alcalde. Named after the original market in Guadalajara, Alcalde has won a number of coveted awards, including a spot on Latin America’s 50 Best Restaurants.
Chef Paco’s Mexican dishes combine traditional techniques with contemporary concepts—a mix of imported and locally sourced ingredients that create incredible culinary flavors.
